Makes 1 2/3 cups
2/3 cup canned coconut milk, stirred
1/2 cup creamy peanut butter
1 1/2 tablespoon fish sauce*
1 1/2 tablespoons soy sauce
1 tablespoon minced peeled fresh ginger
1 1/2 teaspoons packed light brown sugar
1 teaspoon fresh lemon or lime juice
1/2 teaspoon dried hot red pepper flakes
Blend all ingredients in a blender or food processor until smooth.
*Fish sauce is available in the Asian section of most super markets. Despite its name, it does not have a fishy taste or odor, but it does add a great flavor when mixed with other ingredients. Don't be afraid of it.
