Creamy Polenta

Serves 4

3 cups water
3/4 cup instant polenta
3/4 to 1 cup grated Parmesan
1 tablespoon unsalted butter

Bring water to a boil in a 2-quart saucepan and slowly add polenta, whisking constantly. Cook polenta over moderate heat, whisking constantly, 5 minutes. Remove from heat and whisk in cheese, butter, and salt and pepper to taste. Serve immediately.

I adore polenta so I m an expert on it. This recipe is indeed very good.

Rose, thanks for stopping by. I have pulled these recipes from various books and online, and I try to credit them when possible.

I choose recipes I think my daughter might make while she's away at college--she lives in an apartment with a full kitchen and other girls who like to cook. I add now and then as I find more good but simple things.
